At Le Bolli, we produce certified organic extra virgin olive oil that tells the story of our Tuscan land.

It is a blend of Moraiolo, Frantoio, Leccino, Maurino, and Pendolino cultivars, along with three monovarietals: Moraiolo, Leccino, and Frantoio.

All of them are cold-pressed at the company’s Pagliaia oil mill, which was completely renovated in 2020.

By managing the milling process directly, we can ensure a minimal time between harvesting and milling (usually between 3 to 6 hours) to guarantee that our EVO oils have outstanding organoleptic qualities.

The result is an oil with a distinct, elegant personality that reflects the characteristics of the land we cherish.
